Textos Mutantes is a small independent editorial project about dishes and drinking customs that changed as they travelled. Written in English and edited by Elena Sotomayor, it follows connections between the Ottoman world and neighbouring kitchens, including the Mediterranean and the Middle East.
The name is Spanish for 'mutating texts'. We treat recipes as texts that every kitchen rewrites, sometimes through necessity and sometimes through preference. The publication exists because a dish can belong deeply to a place while carrying traces of other places within it.
We compare techniques and names with the broad historical record, using linked reference material where it supports the discussion. We distinguish documented movement from plausible connections and keep disputed origins open. Our interest is in what changed at the stove, and what those changes tell us about the people sharing a table.
